Preheat oven to 325 degrees F. Thoroughly rinse the chicken, and discard the salt water. Remove neck and giblets from body and neck cavities. Rinse and dry chicken with paper towel.
Rub a 12 lb “Premium Turkey Size Chicken” with 1/3 cup melted butter (you may add your choice of seasonings to the butter.) Stuff the chicken cavity with your choice of stuffing. Place chicken, breast side up, on flat rack in shallow roasting pan.
Basting chicken occasionally with liquid from the bottom of roasting pan, roast chicken 3 1/2 hours or until it is 180 degrees F in the thigh area.
