Cordon Bleu in Creamy Onion Sauce

2lb Quality Poultry Products Boneless Chicken Breast
1 pack Quality Poultry Products Chicken Ham or Turkey Ham
1 pack sliced bacon
salt and pepper
Mozzarella cheese
1/4 cup melted butter
1/2 cup flour

Carefully slit breast in the center on the side of the breast. Pound breast gently on both sides and season with a little salt and pepper. Lay a slice of ham and a stick of cheese in the breast,  then roll up. Baste breast with melted butter. Drench in flour.
Wrap bacon strip around the breast. Secure breast with toothpicks if needed.
Bake uncovered at 350 degrees until juices run clear or until done. (about an hour)


1 medium onion
1/4 cup butter
1 tbsp flour
1 cup milk
1/2 cup fresh cream
a few springs chives

Saute onions in 1/4 cup butter until caramelized. Take off fire and stir in 1 tbsp. flour. Add 1 cup milk and return to fire. Stir vigorously and let it cook until it starts to bubble. Add 1/2 cup fresh cream and heat through. Chop up some fresh chives and add to the sauce, along with a little salt and pepper to taste.

Serve chicken over top of sauce and garnish with chopped chives.
